15 Minute Easy Black Bean Nachos

I feel like feeding a crowd shouldn’t be hard and Nachos are such a simple way to feed a crowd, or a family. They are fun and don’t have to be heaving with sour cream and cheese. A small sprinkle of cheese is great for bite, I also made a quick guacamole. I added a heap of fresh tomatoes and herbs with some lettuce to make wraps if people didn’t feel like corn chips (but who doesn’t?!). This recipe is so adaptable, change up the spices, omit things, add things… I found mushrooms in the fridge after we had eaten this and thought they would have gone well in the mix.

Black Bean Nachos

Good quality corn chips

Charred corn

Cherry tomatoes (different colours!)

Spring onion

Corriander

Guacamole (mash up avocado with small diced red onion, bit of garlic, squeeze lime, sea salt)

Feta cheese crumbled up or queso fresco if you can get your hot little mitts on it

 

cup black beans (prepared as per pack instructions OR a can of pre done ones)

diced brown onion

finely diced tomato

finely chopped garlic

1 teaspoon smoked paprika

1 teaspoon cumin

sea salt

squeeze of lime juice

 

Soften the onion and garlic in a little olive oil on a LOW heat, give it time to soften – this will take a good 10 mins or so then add the spices. Add the black beans and tomato and literally just warm through, squeeze some lime on top and sprinkle sea salt to taste. Serve warm or store in the fridge as a cold dip for later.
