Being that Summer has just passed (“passed”, it’s still VERY Summery in Melbourne), I haven’t bothered turning on the oven to make cookies since about October. Warm weather isn’t really conducive to ovens and baking. Grounded Pleasures were kind enough to send me a package of goodies though, and they screamed cookie at me. So, this morning, with the kids, we made cookies.
These are a re-incarnation of my original choice chip cookies but choc’d up to make them a double-chocolate-cookie-of-bliss.
130 grams melted butter
1 beaten egg
2/3 cup Grounded Pleasures Panela Sugar
2 tablespoons castor sugar
1 teaspoon Grounded Pleasures Vanilla Extract
2 tablespoons Grounded Pleasures Straight Up Cocoa
1 cup SR flour
3/4 cup plain flour
1 heaped teaspoon baking powder
100 grams chopped good quality dark chocolate
Pre heat oven to 150 degrees celsius
Combine sugars in bowl, add melted butter and stir. Set aside.
Sift flour, cocoa, baking powder together into 1 bowl
In an electric mixer bowl add the butter/sugar mix, stir on low, add the dry ingredients slowly, add the egg until combined. Add the chocolate until combined through.
Roll into balls of approximately 35 grams each.
Bake for approximately 15 minutes
